A Nordic inspired, healthy way to begin the day, this just right, full grain hot cereal is a tasty way to eat more fiber, lower cholesterol and help keep New Year’s resolutions.

 

Kitchen Notes

Any quinoa works, but tri-color quinoa makes a more intriguing looking finished cereal. Oat milk, while difficult to find, is a tasty substitution for the almond milk. Apples or other seasonal fruit may be substituted for the pear.

ingredients

1 cup quinoa, rinsed & drained in cold water

Pinch sea salt

1 pear, peeled, cored & diced

1 cup unsweetened almond milk

1 tablespoon chia seeds

1 tablespoon flax seeds

1/4 cup sliced almonds

Blueberries, raspberries, or other fruit

MAPLE SYRUP

 

directions

1. Pour 2 cups cold water, quinoa and salt into a SMALL POT. Bring to a boil, lower to temperature to simmer, cover pot, and cook for 15 minutes.

2. In a SMALL SKILLET, toast the almonds over medium low heat. Remove from heat and reserve.

3. Add almond milk, chia seeds & flax seeds to the porridge.

4. Scoop the porridge into BOWLS, sprinkle with almonds and fruit, and pass the maple syrup and a SMALL PITCHER of almond milk at the table.
